  • 1/2 Onions, Thinly Sliced

  • 1/2 teaspoon Ginger Garlic Paste
  • 1/4 teaspoon Red Chili Powder
  • 0.13 teaspoon Turmeric Powder
  • As required Salt To Taste
  • 1.13 Le Spices
  • pinch A Pinch Of Saffron Soaked In Warm Milk

Cooking Directions

  • STEP 1.Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it marinate for at least 30 minutes.
  • STEP 2.In a large pot, heat ghee or oil and add whole spices like cinnamon, cardamom, cloves, and bay leaves. Sauté until fragrant.
  • STEP 3.Add sliced onions and cook until golden brown. Then, add the marinated chicken and cook until it is partially cooked.
  • STEP 4.In a separate pot, parboil the basmati rice with whole spices and salt. Drain the rice once it is 70% cooked.
  • STEP 5.Layer the partially cooked chicken and parboiled rice in alternate layers in a heavy-bottomed pot. Sprinkle saffron milk and ghee on top.
  • STEP 6.Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes or until the rice is fully cooked and the flavors are well blended.
  • STEP 7.Garnish with fried onions, fresh mint leaves, and coriander leaves. Serve hot with raita or salan (curry).

  • You can add a few drops of rose water or kewra water for an enhanced aroma.
