Kachagolla is one such iconic sweet from the range of sinful Bengali sweetmeats made with chenna as the star ingredient. It is one of the most popular sweets in Bengal.
STEP 8.1. First crumble the paneer, we do not need to knead or mash it to smooth paste like consistency. I should be evenly crumpled to grainy texture. Then make a two portion 3/4 and 1/4.1/4th portion kept separate.
STEP 9.2. Take ghee and 3/4th portion of paneer and jaggery, start heating pan with low flame. Continuous stir until Jaggery melts with paneer and make a binding. But don't cook longer as it will turn the paneer to rubbery texture. If you want more sweetness you can add sugar at this point.
STEP 10.3 . Now when it comes to room temperature, add to the remaining paneer, mix well ,and make round balls( ladoo shape). You can garnish with powdered pistachios or other dry fruit or with raisins as per choice.
STEP 11.Refrigerate and relish with family and friends 😊🎊🎉
