A delicious gluten free dumpling of seasoned ground pork, wrapped in an egg wrapper that uses no flour. Dumpling in general is found in many world cuisines and it refers to a piece of dough that can either be wrapping some type of filling or simply the dough itself with no filling. The dough is usually made from wheat flour, potato starch, cornmeal and so on.

Ingredients for No Dough Dumplings Recipe

  • As required Ingredients for filling
  • 120 gram Spinach blanched and diced
  • 250 gram Ground Pork
  • 2 teaspoon Soy sauce
  • 2 teaspoon Oyster Sauce
  • 3/4 teaspoon Salt
  • 1 teaspoon Grated garlic
  • As required White Pepper
  • 1 tablespoon Sesame oil
  • 1/4 teaspoon Scallions diced
  • As required Ingredients for egg wrapper
  • 8 Eggs
  • As required Cornstarch water

Directions: No Dough Dumplings Recipe

step 1

  • STEP 1.1 fill a pot with 2 ½ ltr water and bring it to a boil. Add ½ tsp salt and put 120 gm spinach leaves into the water stem ends first. After a few seconds push in the leaves as well. Blanch for about 20 seconds and take them out using a sieve.

step 2

  • STEP 2.2 spread out the leaves on the cutting board to help them to cool down faster.

  • STEP 3.3 then finely dice them. Squeeze the moisture out of the spinach and set it aside in a bowl.

  • STEP 4.In a bow ladd 250 gms ground pork. Add 2 tsp soy sauce, 2 tsp oyster sauce, ¼ tsp salt, 1 tsp grated garlic, white pepper to taste, 1 tbsp sesame oil. Mix all the ingredients together and then stir in one direction for a few minutes to develop the texture.

  • STEP 5.4 add the diced spinach and ¼ cp diced scallion. Mix it well.

  • STEP 6.5 divide the filling into individual portions of about 2 tsp each. Shape into ovals. Set aside.

  • STEP 7.6 for the egg wrappers, into a large mixing bowl crack 8 eggs, ½ tsp salt, and cornstarch water (2 tsp cornstarch + 2 tsp water). Whisk together well till all the egg white is well incorporated.

  • STEP 8.7 to make the egg wrapper s small non stick frying pan is required.

step 9

  • STEP 9.8 put the pan on medium heat. Add a little oil to the pan, enough to swirl and spread over the surface of the pan.

step 10

  • STEP 10.9 for a frying pan that is 4 ½ inches in diameter, add little less than 2 tbsp egg. Let it fry.

step 11

  • STEP 11.10 when there is still some liquid egg add the oval of pork filling on one side off the egg.pick up the opposite side and fold it over the filling and pack it tight to seal it completely. This is why the egg should still be slightly liquid to help seal it shut as it cooks.if the egg is completely dry when the filling is added, the egg dumpling may not seal.

  • STEP 12.11 fry it for 15 seconds on one side, then flip it to cook for another 15 seconds on the other side.

step 13

  • STEP 13.12 remove from the pan. This process will take approximately 1 ½ minute. The dumplings are semi cooked at this stage as this is not sufficient time to cook the pork filling.

step 14

  • STEP 14.13 arrange the dumplings in a steamer and place it on a stand in cold water. Turn on the heat and let it come to a boil. Steam on high for 15 minutes.

  • STEP 15.14 serve hot with dipping sauce
