Ingredients for No Bake Eggless Mango Cheesecake Recipe

  • As required Ingredients for biscuit crust
  • 1.50 cup Digestive or Marie biscuits crushed
  • 1/4 cup Butter melted
  • As required Ingredients for cheesecake
  • 400 gram Mascarpone or regular cream cheese
  • 1/2 cup Granulated or castor sugar
  • 2 cup Fresh mango puree
  • As required Chopped mangoes for topping

Cooking Directions

  • STEP 1.In a food processor or chopper make 1 ½ cup coarse crumb of digestive biscuits.
  • STEP 2.For the biscuit base, in a mixing bowl add the biscuit crumbs, ¼ cup butter and mix well till incorporated. When pressed together in the fist they should hold and when pressed with finger they should fall apart.
  • STEP 3.In a large mixing bowl, add 400 gms cream cheese, add ½ cup sugar. Whisk till they form a smooth mixture. Do not over beat else cheese will curdle.
  • STEP 4.Next add the mango puree and beat until just well combined.
  • STEP 5.To assemble the mango cheesecake, use small glass tumblers. Spoon a bottom layer of biscuit crumb and gently press it down to make a tight even layer. Next spoon the mango cheesecake mixture onto the biscuits crumb layer. Spoon enough to make a thick layer, till the top of the small glasses.
  • STEP 6.Lastly, top with chopped ripe mango. Refrigerate for a few hours or overnight till ready to serve.
