This Nigerian red stew recipe features my favorite Nigerian tomato stew using farm raised ram meat which adds a distinct, delicious gamey flavor. Tomato stew is a staple eaten all over West Africa with some ingredient variations based on culture and individual preferences.

Ingredients for Nigerian Stew Recipe

  • 3 Nos Red Bell Pepper
  • 2 Nos Fresno Pepper
  • 4 Nos Plum Tomatoes
  • 2 Nos Med Onions
  • 1/2 cup Chicken Stock
  • 2 Nos Fresno peppers
  • 2 Nos Habanero peppers
  • 3 Cloves Garlic
  • As required Ginger
  • As required Bay Leaves
  • 1 teaspoon Thyme
  • 1.50 teaspoon Curry Powder
  • 1/4 cup 0.5 Vegetable Oil
  • As required Salt To Taste
  • 1 teaspoon Paprika
  • 2 Nos Stock Cubes
  • As required Tomato Paste
  • As required White Pepper To Taste
  • As required Black Pepper To Taste
  • 2 Nos Seasoning Cubes

Directions: Nigerian Stew Recipe

step 1

  • STEP 1.Blend onions,tomato,ginger,garlic and peppers into a paste and in a cooking pot add blend paste and cook it for 10 minutes and keep it aside.

step 4

  • STEP 1.Add oil in a pan & heat it. Add in chopped onions mix it and add bay leaf and thyme.

step 6

  • STEP 1.4. Cook it for about 3 minutes and now add the boiled paste and cook it for about 10-15 minutes.

step 8

  • STEP 1.6. After 10-15 mins add curry powder,black pepper,paprika and white pepper

step 9

  • STEP 2.7. Add seasoning cubes and salt

step 10

  • STEP 3.8. Then add stock followed by turkey wings,cover and cook it for 5 mins
