STEP 1.In a mortar crush 10 cardamoms, 1 piece ginger and 4 garlics
STEP 2.In a deep pan add 2 tbsp ghee, 7 cloves, 1 cinnamon stick and a piece of mace.
STEP 3.Add the crushed ingredients and mix well.Saute well.
STEP 4.Into the pan add sliced onions and green chillies.
STEP 5.Pour 4 ½ cup of boiling water into the pan. Add a pinch of salt to taste and mix well.
STEP 6.Finally add the soaked and drained basmati rice.
STEP 7.Cover the vessel with a towel in between the lid.
STEP 8.After 5 minutes, gently stir the mixture. Cover the vessel and cook again for another 5 minutes.
STEP 9.Garnish with fried cashews and raisins on top of rice.
