Cook tomato in 1/4 cup water. Make puree when cool.
Soak saffron in milk , keep covered aside.
Starting from onion in the ingredients list add everything to a grinding jar & grind to smooth paste using least water.
Heat 5 tbs oil in a pan. Add a pinch asafoetida n 1/2 tsp turmeric.
Add ground paste and fry till it leaves oil.
Add tomato puree, salt n jaggery/sugar. Boil.
Mix in boiled veggies, saffron milk.
Cook on low flame for 10 min.
Turn off heat..serve with rotis.
