Nasu Nibitashi can be eaten either at room temperature or cold.

Ingredients for Nasu Nibitashi Recipe

  • 4 Japanese eggplants
  • 1 teaspoon Oil
  • 1 cup Dahsi
  • 2 tablespoon Soy sauce
  • 2 tablespoon Sake
  • 2 tablespoon Mirin
  • 2 teaspoon Sugar
  • 2 tablespoon ginger root, grated
  • As required chopped green onions

Directions: Nasu Nibitashi Recipe

  • STEP 1.Cut the eggplant as showed.
  • STEP 2.In a medium pot cook the eggplant for 3 mins.
  • STEP 3.Add dashi, soy sauce, sake, mirin, sugar and ginger.
  • STEP 4.Cook for 4 mins and remove from heat.
  • STEP 5.Serve and top with ginger and green onions.
