  • 1 cup All purpose flour
  • 2 tablespoon Sooji
  • 4 tablespoon Besan
  • 1/2 teaspoon Baking powder
  • 1 teaspoon Cardamom powder
  • 1/4 teaspoon Salt

How to Make Nankhatai Recipe

STEP 01

Attach the kneading blade in the food processor jar. Add 1 cup all purpose flour, 2 tbsp sooji (semolina/rava), 4 tbsp besan (gram flour), ½ tsp baking powder, 1 tsp cardamom (elaichi) powder, ¼ tsp salt, ¾ cup castor sugar, ½ cup ghee and 2 tbsp yogurt (dahi/curd) or more if required. Shut the jar and pulse mix the ingredients. Then open and add more yogurt.

Shut and continue to knead to make a firm dough. Once the dough pulls away from the sides of the jar. Remove it from the food processor and transfer to a bowl. Portion and shape into bite size balls.

Flatten slightly between palms and press the center with your thumb to make a small dip. Press some chopped pistachio in the center.

STEP 01

Arrange the nankhatai on a baking tray and bake in a preheated oven at 180 degrees celsius for 20 to 30 minutes till golden brown.
