Cooking Directions

  • STEP 1.Heat oil in a large pot and add sliced onions. Cook until golden brown.
  • STEP 2.Add ginger-garlic paste, green chilies, and spices. Cook for a minute.
  • STEP 3.Add lamb shanks and brown them on all sides. Add water and simmer for 2-3 hours until the meat is tender.
  • STEP 4.Remove the shanks from the pot and strain the gravy. Skim off the excess fat.
  • STEP 5.Return the shanks to the pot and simmer for another 30 minutes to thicken the gravy.
  • STEP 6.Serve hot with naan or rice, garnished with fresh coriander leaves.

Cooking Tips

  • For a richer flavor, marinate the lamb shanks with yogurt and spices for a few hours before cooking.
  • You can also use a pressure cooker to reduce the cooking time.
