Directions: Mutton Tehari Recipe

Cooking Directions

  • STEP 1.In a large bowl, marinate the mutton pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
  • STEP 2.Heat oil in a pressure cooker and add whole spices like cinnamon, cardamom, cloves, and bay leaves.
  • STEP 3.Add sliced onions and cook until golden brown. Then, add the marinated mutton and cook until it changes color.
  • STEP 4.Add soaked rice, water, and salt. Close the pressure cooker and cook for 2-3 whistles or until the mutton and rice are cooked.
  • STEP 5.Once done, let the pressure release naturally. Fluff the rice gently with a fork and serve hot with raita or salad.

Cooking Tips

  • Marinating the mutton for at least 30 minutes will help to tenderize the meat and enhance the flavors.
  • Soaking the rice for 30 minutes before cooking will ensure that the grains cook evenly and become fluffy.
  • You can adjust the spice levels according to your preference by adding more or less red chili powder.
  • For a richer flavor, you can add a spoonful of ghee (clarified butter) while cooking the mutton.
  • Garnish the Mutton Tehari with fried onions and fresh coriander leaves for an extra touch of flavor.

Storage and Serving

  • Mutton Tehari can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, sprinkle some water over the rice and microwave or steam until heated through.
  • Serve Mutton Tehari hot with raita, salad, or a side of yogurt for a complete and satisfying meal.
