Recipe for Paya Soup. This is a traditional East Indian recipe and one of the easiest recipes of Mutton Trotters or Paya Soup that you can make at home. We call this soup ‘Calde’ and you can use this recipe to make a hot and strong Chicken or mutton bone soup too. This soup is specially prepared for elders or the ones who suffer from back pain or joint pain. It is said to bring immense relief when consumed regularly.

Ingredients for MUTTON PAYA SOUP (CALDE) Recipe

  • As Required For Mutton Paya Soup
  • 1.50 g G oat legs or Paya/trotters
  • 2.50 g 10 to 12 Garlic flakes
  • 1/2 tbsp Oil/ghee
  • 1.50 cups water
  • 1/4 tsp Salt or as per taste
  • As Required Spice mix
  • 1/2 tbsp 2 tbsp
  • 2 Pieces Cloves
  • 3/4 Pieces Cardamom
  • 1/2 inches 2 inches
  • 1/4 tsp Peppercorns
  • 0.13 tsp ½ tsp turmeric powder

Directions: Mutton Paya Soup (calde) Recipe

  • STEP 1.Wash and cut the Paya (trotters) into 3 to 4 pieces. Put them into a pressure cooker with 2 cups of water and salt. Pressure cook for 15 to 20 minutes.
  • STEP 2.Grind the spices listed under 'Spice Mix' into a smooth paste with a little water.
  • STEP 3.Heat a vessel and add 2 tbsp vegetable oil or ghee and add the crushed garlic cloves. Saute for a minute or two.
  • STEP 4.Add the spice paste and fry for 2 minutes and then add the Mutton Paya along with the stock. Add 3 to 4 cups of water to the soup or add according to your taste.
  • STEP 5.Mix well and bring the soup to a boil. Adjust seasonings to suit your taste.
  • STEP 6.Simmer for 6 to 8 minutes and then switch off the flame.
  • STEP 7.Serve soup hot.
  • STEP 8.NOTES
  • STEP 9.To wash the Paya – add a few tbsp of wheat flour and scrub each Paya well and then wash them thoroughly a couple of times.
  • STEP 10.Cooking time will entirely depend on the size of the Paya.  It took me 20 minutes after the 1st whistle as the trotters were small in size.
  • STEP 11.Add water to make soup as per your taste. You could add 6 cups of water or more.
  • STEP 12.Adjust seasoning to suit your taste
