Mutton kosha is an iconic Bengali delicacy. The word kosha is similar in meaning to bhuna, which involves slowly cooking a gravy over low flame for a very long time to get a rich, dark-brown gravy and melt-in-the-mouth mutton pieces.

Make a paste using all the ingredients for marinating and apply this paste all over the mutton and let it marinate for about 8 hours.
Finely chop the garlic and green chilies for the curry.
Heat some oil in a pan and temper a few dried red chilies, bay leaves,cardamom,cloves and cinnamon in it.
Add the sliced onions and fry well until brown and then add chopped ginger, garlic and green chili paste to it.
Add the mixed spices and marinated mutton to the pan and mix everything well.
Beat some yogurt and mix with the mutton and add in sugar, salt and some water into the pan and mix it well.
Cook under cover, until the mutton gets brown, add some chopped green chili, some water and cook it until the mutton becomes tender
Serve with pulao or rice
