  • STEP 1.Preheat the oven to 180°C (350°F).
  • STEP 2.In a large bowl, combine the minced mutton, offal, breadcrumbs, onions, herbs, and seasoning.
  • STEP 3.Divide the mixture into equal portions and shape them into round balls.
  • STEP 4.Wrap each ball with caul fat, ensuring it is completely covered.
  • STEP 5.Place the faggots on a baking tray and bake for 45-50 minutes, or until golden and cooked through.
  • STEP 6.While the faggots are baking, prepare the onion gravy by sautéing onions in butter until caramelized, then adding flour, stock, and seasoning. Simmer until thickened.
