A very easy side dish. This masala egg roast is also known as nadan mutta roast, a dish from the coastal south Indian state of Kerala. Unlike most of my Keralite recipes which call for coconut, this dish just so happens to be coconut-free. It just means the eggs in this dish are coated in a thick sauce made with ripe tomatoes and sweet caramelized onions. If you like egg curry, you are going to love this recipe for egg roast.

Ingredients for Mutta Roast Recipe

  • 4 No.s Boiled egg
  • 1/2 teaspoon Mustard Seeds
  • 1 tablespoon Chopped ginger
  • 1.50 tablespoon Chopped garlic
  • 4 No.s Sliced onions
  • 1 teaspoon Salt
  • 1/4 teaspoon Turmeric powder
  • 1/2 tablespoon Chilli Powder
  • 1.50 tablespoon Kashmiri chilli powder
  • 1/4 cup Hot water
  • 1/2 teaspoon Lemon water
  • 1/2 teaspoon Crushed pepper

Directions: Mutta Roast Recipe

step 1

  • STEP 1.Soak 1 cup white rice in water for 30 minutes. Drain out the water.

step 2

  • STEP 1.Set a pan on medium flame with cooking oil.

step 3

  • STEP 1.Add ½ tsp of mustard seeds. Once the mustard seeds are done spluttering, add 1 tbsp chopped ginger, 1 ½ tbsp chopped garlic, 4 sliced onion and a pinch of salt.

  • STEP 1.Add a few curry leaves and continue stir cooking for 15-20 minutes.

  • STEP 1.Add ¼ tsp of turmeric powder, ½ tnsp of chilli powder, 11/2 tbsp of kashmiri chilli powder and ¼ cup of hot water. Saute for 3-4 mins

step 6

  • STEP 1.Let the water get dried up and then add 4 boiled eggs and mix well the ingredients.

step 7

  • STEP 1.Finally cover the eggs in gravy and cook for another 15 minutes. Serve as a side dish.
