In a pan heat cooking oil. Add ½ tsp of mustard seeds and let it to splutter.
Add 1 tsp each of crushed ginger crushed and crushed garlic, 2 green chillies chopped and 1 cup of chopped onion.
Add 3 cup of chopped spinach leaves and a pinch of salt. Cook for 2 minutes on a medium flame.
Continue stirring till the egg is properly cooked. Turn off the flame once ready.
