Murgh Badami is an Almond based gravy dish which is made with almond and melon seeds paste.
This is one of the rich delicacies from the Mughlai cuisine.

5 Pieces Almonds(blanched)
1.33 Tbsp Boiled onion paste
0.67 Tsp ginger garlic paste
0.67 Tsp Melon seeds
0.67 Pieces Dry Red Chillies
As Required Red chilli powder
0.33 Pieces Bay leaf
0.33 Tbsp Curd
0.33 Tsp Ghee
1 Tsp Refined oil
0.67 As Required Special masala
As Required Turmeric powder
To Taste Salt
0.33 Tsp kasuri methi

STEP 1.Chicken marination :-in a mixing bowl add chicken, curd, ginger garlic paste, red chilli powder, few pinches turmeric powder and salt. Mix well and keep aside for 1 hour.
STEP 2.Special masala:-in a thick bottomed pan add 1 cinnamon stick, 4 cloves, 10 Cardamom, half teaspoon white pepper corn, half teaspoon cumin seeds (dry roast, cool and grind to a fine powder)
STEP 3.In a mixer grind blanched almonds and melon seeds, make a smooth, fine paste using little water.
STEP 4.Heat refined oil and ghee In a heavy bottom pan add onion paste, saute till water almost dry.
STEP 5.Add bay leaf, dry red chillies and marinated chicken and special masala, mix well,cook for 5 minutes on low to medium heat.
STEP 6.Add almond paste and 2 cups of water. Check salt. Cover and cook for 15 minutes on medium heat.
STEP 7.Add kasuri Methi. Mix well. Turn off the flame.
STEP 8.Serve murgh Badami hot with paratha,Naan, Pulao etc etc.
