Delicious tea time snack. Best served with coconut chutney. This Mulaku Bajji is a good tea-time snack that is commonly available in road-side tea shops in Kerala. It can also be easily made at home and requires less time for preparation.Mulak bajji is made up of chilli peppers coated with a gram flour based batter and deeply fried to its crisp form. It can serve just like that itself or can serve with any chutneys or sauce.

Ingredients for Mulaku Bajji Recipe

  • 1 No.s Bajji Chilli
  • 0.17 cup Besan
  • 0.33 teaspoon Rice flour
  • 0.17 teaspoon Kashmiri chilli powder
  • 0.33 pinch Asafoetida powder
  • As required Salt
  • 0.33 pinch Sugar
  • 0.17 pinch Baking soda
  • 0.13 cup Water
  • As required Oil For Frying

Preparation Directions

  • STEP 1.Wash and pat dry the chillies. Remove the seeds.

Cooking Directions

  • STEP 1.Take a bowl and add 1 cup gram flour, salt to taste, 2pinch asafoetida, 1tsp kashmiri chilli powder, 2tsp rice flour, 1 pinch baking soda, 2pinch sugar and mix well.
  • STEP 2.Gradually add ¾ cup water and mix well to prepare the batter.
  • STEP 3.Heat oil in a pan.
  • STEP 4.Dip the chilli into the batter. Fry the chilli in medium flame.
  • STEP 5.When both sides become golden brown, transfer it to a strainer.
  • STEP 6.Mulaku bajji is ready to be served.

Special Comments

  • STEP 1.If the chilli is too spicy, then soak the chillies for 30 mins in lukewarm water with some salt in it.
