Ingredients for Msemmen (Moroccan Pancakes) Recipe

  • 2 cup Flour
  • 1 cup Semolina
  • 3/4 cup Oil
  • 3 tablespoon Butter
  • 1 tablespoon Salt
  • 1 tablespoon Sugar
  • 1 teaspoon dry yeast
  • 1-2 cup Warm Water

Directions: Msemmen (moroccan Pancakes) Recipe

  • STEP 1.S for making the dough mix all the dry ingredients thoroughly flour, semolina, salt, sugar, and yeast.
  • STEP 2.Gently add some water and work the dough until you are able to create a ball with the dough
  • STEP 3.If you are kneading the dough by hand, knead for 20 minutes while adding water until you get an elastic dough.
  • STEP 4.You can also use a kneading machine to speed up the process. Put the dough ball in the machine and automatically knead for the next 10 minutes while adding water slowly.
  • STEP 5.Make small balls with the dough and let the dough rest for 20 minutes (the amount of water needed depends on the quality of absorption of the flour you are using. The goal is to get at the end a flexible dough, if your dough is too sticky add some flour. If it is too tight add some water and continue kneading it).
  • STEP 6.S for folding the msemmen mix the melted butter with the oil.
  • STEP 7.Brush some of the oil/butter mixture on the flat surface. Take one dough ball and flatten it with your hands. Gently keep stretching the dough until you get a thin circle of dough and then fold the circle into a square.
  • STEP 8.Gently apply the dough square with your fingertips until you get a thin dough square. On a low flame, cook the msemmen for 5-10 minutes on both sides. The msemmen should be served hot with honey and moroccan mint tea
