Delicious and healthy Moroccan Zucchini salad served with some crusty bread is an amazing duo. This salad of zucchini and mint is a version of the best salad and it’s fresh and bright and a terrific side dish to a summer meal. Shredded vegetables with Moroccan seasonings and fresh herbs make an easy, light side dish in this carrot-zucchini salad. Sweet carrots pair well with Moroccan flavors of this salad. It’s a little sweet, a little savory, with a hint of cinnamon and some cumin.
