I love moroccan flavours, particularly the spices with added sweetness either coming from dates, honey and other dried fruits. What i love even more is when something that tastes this good is easy and speedy to make. Fresh parsley and mint add freshness and vibrancy and the currants are a nice sweet surprise. Finally, what is a salad without some good ol' fashioned cucumber and tomato? I bet you cannot stop eating it I could even have this as a light meal Even my husband who frowns upon salads and anything remotely healthy loves this
