Moroccan rice pudding flavored with Orange Blossom Water.Rice pudding is prepared in one form or another all over the eastern Mediterranean. This Moroccan version is particularly delicious, perhaps because the rice is cooked in two stages; first it's boiled in water, then it's simmered in milk.

Ingredients for Moroccan Rice Pudding Recipe

  • 1 cup Rice
  • 2 cup Water
  • 2 cup Milk
  • 1 piece small lemon peel
  • 1 stick Cinnamon
  • 0.33 cup sugar – same cup used for the rice
  • 1 teaspoon orange blossom water
  • 1 tablespoon Butter
  • As required Ground cinnamon

  • STEP 1.Start by washing the rice with water and change the water a couple of times until you

  • STEP 2.Re clear water.

  • STEP 3.In a saucepan add the rice and water. Add a piece of lemon peel and a cinnamon stick.

  • STEP 4.Cover your saucepan with a lid, leave a little opening for the steam to come out, and cook the rice on medium flame, stir from time to time, so that the rice at the bottom does not burn or stick at the bottom.

  • STEP 5.Once the water has evaporated, after 15-17 minutes, add the milk, you can use 2 cups of milk for every cup of rice you use. Cover it with a lid and continue cooking and of course, stirring occasionally.

  • STEP 6.When the milk has dispersed, cook it for another 15 minutes or so, taste your rice, it needs to be really soft, if it’s not, add a little more milk and continue cooking.

  • STEP 7.When your rice is ready add sugar and butter as per your desire. Mix it well.

  • STEP 8.Turn off the flame and finish with orange blossom water.
