  • 1 nos fresh moringa pods (drumsticks)

  • 1/4 tbsp ghee or vegetable oil
  • As required ½ tsp cumin seeds
  • As required ½ tsp turmeric powder
  • As required ½ tsp freshly ground Black pepper
  • As required ½ tsp roasted cumin powder
  • 3/4 cups vegetable stock or water
  • As required ½ cup thin coconut milk
  • 1/4 tbsp fresh coriander
  • As required finely chopped
  • As required Salt
  • As required to taste
  • 1/4 tsp Lemon juice

Directions: Moringa Soup For The Changing Season: Try This Soothing Recipe

  • STEP 1.First, wash your moringa pods thoroughly and trim both ends. Then cut them into roughly 5–6cm pieces. There is no need to peel them at this stage.
  • STEP 2.Now, bring a pan of lightly salted water to the boil. Add the drumstick pieces and cook them for 8–10 minutes, until the flesh has softened but the pods are not completely falling apart. Drain and allow them to cool slightly.
  • STEP 3.Once cool enough to handle, scrape the soft flesh and pulp from each drumstick using a spoon. Keep the fibrous outer shells aside. Also, remove any particularly tough strands or fibres from your pulp. You should have roughly ¾–1 cup of usable moringa pulp.
  • STEP 4.Time to heat the ghee or oil in a deep saucepan over medium heat. Add in your cumin seeds and let them sizzle for a few seconds. Now, add the onion and cook for 3–4 minutes until translucent.
  • STEP 5.Stir in the ginger and garlic and cook for another minute, taking care not to let them brown too much. Pour in your carrot, potato, tomato, and turmeric. Season with salt and cook for 2–3 minutes.
  • STEP 6.Now, pour in the vegetable stock or water and bring everything to a gentle boil. Reduce the heat, cover, and simmer for 12–15 minutes, or until the potato and carrot are completely tender.
  • STEP 7.Time to stir in your extracted drumstick pulp into the soup. Also, add the freshly ground black pepper and roasted cumin powder. Simmer uncovered for another 5 minutes, so that the flavours come together.
  • STEP 8.Use a stick or hand blender to pulse your soup until mostly smooth. You can leave it slightly textured if you prefer a more rustic bowl. For an especially silky soup, pass it through a fine sieve after blending.
  • STEP 9.Now, return your soup to low heat and stir in the coconut milk. Warm gently for 2–3 minutes, but never let it boil vigorously.
  • STEP 10.Taste and adjust the salt and pepper accordingly. Then turn off the heat and stir in the lemon juice. The small amount of acidity helps brighten the earthy moringa and creamy coconut milk.
  • STEP 11.Finally, ladle into warm bowls and scatter your chopped coriander over them. A final pinch of freshly ground black pepper makes the soup particularly good on a wet, gloomy evening. Serve immediately.
