  • 1/4 cup Coconut Milk
  • 1/4 tablespoon Tamarind Paste

Cooking Directions

  • STEP 1.Wash and trim the moringa pods, removing any tough ends.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped onions and sauté until golden brown. Then, add ginger-garlic paste and cook for a minute.
  • STEP 4.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 5.Add the moringa pods and cook for a few minutes until they are slightly tender.
  • STEP 6.Pour in coconut milk and tamarind paste. Stir well and let it simmer for 5-7 minutes.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
