STEP 1.1.in a saucepan place 8 chicken drumsticks, 3 cm sliced ginger, 5 sliced cloves garlic, 4 spring onions cut in halves, 1 tsp red peppercorn, 3 tbsp sugar,1 star anise, 2 tbsp chinese five spice powder, 4 tbsp dark soy sauce, 1 ltr water.
STEP 2.2. stir all the ingredients together and bring to a boil for 2 minutes.
STEP 3.3. Then cover the pan, turn the heat to medium and cook for 30 minutes until the chicken is tender.
STEP 4.4. Then remove the chicken pieces from the pan and keep aside.
STEP 5.5. In a wok heat, 1 ltr oil . When oil is hot add the chicken drumsticks one at a time.
STEP 6.6. Fry for 3 to 5 minutes till crispy and golden.
STEP 7.7. Remove from the wok, drain and transfer to a dish and serve hot.
