A healthy, delicious and easy to cook Nigerian bean pudding cake prepared from black eyed beans,boiled egg and other seasoning ingredients. Moin moin is already pretty healthy - it's high in protein, steamed not fried, made with whole foods, gluten free. This variation adds a nutritional boost but is ultimately a fun way of rethinking traditional moin moin. It tastes flipping fantastic too, so there's that. This delicious delicacy is highly rich in protein and other essential nutrients that play an important role in our bodies.

Ingredients for Moin Moin Recipe

  • 1.50 cup black eyed beans
  • 1 Nos red bell pepper
  • 1 Nos habanero pepper
  • 3/4 cup Onion
  • 2 tablespoon Crayfish
  • 1/4 cup vegetable oil
  • 2 Nos bullion cubes
  • 3/4 cup cooked minced fish
  • 4 Nos hard boiled eggs
  • As required Salt

step 1

  • STEP 1.Soak the beans in water for 1 hour. Now add the beans in the grinder with double the amount of water and grind it to remove the peels. Now rinse it 3-4 times. Blend the peeled beans along with red bell peppers, habanero onions and add some water to make a smooth paste. Take out the blend into a bowl and add crayfish. Then add cooked minced fish and salt.

  • STEP 1.Now add some vegetable oil and mix. Pour the mixture in an aluminium foil pans and top it with boiled eggs. Now seal the pan with the foil. Add water in a pot and carefully place the moin moin aluminium pan into the pot and steam it for an hour. Serve it cool.
