  • 3 tablespoon Peanuts roasted crisp
  • 1 teaspoon Olive oil
  • 1/2 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin seeds
  • 1 sprig Curry leaves
  • 1 inch Ginger grated
  • 2 No.s Green chillies chopped
  • 1 No.s Capsicum finely diced
  • 1 No.s Carrot finely chopped
  • 1 No.s Onion finely chopped
  • 1/2 cup Steamed green peas
  • 2 cup Poha washed and rinsed
  • 1 teaspoon Turmeric powder
  • As required Salt
  • 2 teaspoon Sugar
  • 1 teaspoon Lemon juice
  • As required Coriander leaves chopped A few

How to Make Mixed Vegetable Poha Recipe

step 1

STEP 01

In a pan add 1 tsp olive oil, 3 tbsp raw peanuts and roast till crisp . Remove from the pan and keep aside.

In the same pan add 1 tsp olive oil, ½ tsp mustard seeds, ½ tsp cumin seeds and let it crackle. Then add 1 sprig curry leaf torn. Saute for a few seconds.

Then add 1 inch ginger grated, 2 green chillies chopped,1 capsicum finely diced, 1 carrot finely chopped, 1 onion finely chopped and stir to mix well. Add ½ cup steamed green peas.

At this stage add 2 cups washed and rinsed poha, 1 tsp turmeric (haldi) powder, salt to taste, 2 tsp sugar, 1 tsp lemon juice. Sprinkle water and mix all the ingredients together well. Cover and cook for a few minutes. Stir intermittently.

Lastly add chopped coriander leaves and the roasted peanuts. Mix well and add some bhujiya on top.
