A wholesome breakfast made from poha (flattened rice) cooked with mixed vegetables is a delecacy which is vey popular in the central India. Light and cooked poha mixed with some nutritios vegetables, prepared with flavourful spices, garnished with fresh cilantro and topped with some bhujiyya is a perfect breakfast recipe.

Ingredients for Mixed Vegetable Poha Recipe

  • 3 tablespoon Peanuts roasted crisp
  • 1 teaspoon Olive oil
  • 1/2 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin seeds
  • 1 sprig Curry leaves
  • 1 inch Ginger grated
  • 2 No.s Green chillies chopped
  • 1 No.s Capsicum finely diced
  • 1 No.s Carrot finely chopped
  • 1 No.s Onion Finely Chopped
  • 1/2 cup Steamed green peas
  • 2 cup Poha washed and rinsed
  • 1 teaspoon Turmeric powder
  • As required Salt
  • 2 teaspoon Sugar
  • 1 teaspoon Lemon juice
  • As required Coriander leaves chopped A few

Directions: Mixed Vegetable Poha Recipe

step 1

  • STEP 1.In a pan add 1 tsp olive oil, 3 tbsp raw peanuts and roast till crisp . Remove from the pan and keep aside.

step 2

  • STEP 1.In the same pan add 1 tsp olive oil, ½ tsp mustard seeds, ½ tsp cumin seeds and let it crackle. Then add 1 sprig curry leaf torn. Saute for a few seconds.

  • STEP 1.Then add 1 inch ginger grated, 2 green chillies chopped,1 capsicum finely diced, 1 carrot finely chopped, 1 onion finely chopped and stir to mix well. Add ½ cup steamed green peas.

step 4

  • STEP 1.At this stage add 2 cups washed and rinsed poha, 1 tsp turmeric (haldi) powder, salt to taste, 2 tsp sugar, 1 tsp lemon juice. Sprinkle water and mix all the ingredients together well. Cover and cook for a few minutes. Stir intermittently.

step 5

  • STEP 1.Lastly add chopped coriander leaves and the roasted peanuts. Mix well and add some bhujiya on top.
