Directions: Mixed Veg Kadai Recipe

Cooking Directions

  • STEP 1.Heat oil in a kadai or a deep pan and add cumin seeds and dried red chilies.
  • STEP 2.Add onions and sauté until golden brown. Then, add ginger-garlic paste and cook for a minute.
  • STEP 3.Add tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and oil starts to separate.
  • STEP 4.Add the mixed vegetables and cook for a few minutes. Then, add water and cover the pan. Let it simmer until the vegetables are cooked.
  • STEP 5.Finally, add garam masala and kasuri methi. Mix well and cook for another minute.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with roti or rice.

  • You can use any combination of vegetables like carrots, beans, bell peppers, cauliflower, peas, etc.
  • To enhance the flavor, you can also add paneer or tofu to the dish.
