Directions: Misal Pav Recipe: Make This Spicy Maharashtrian Street-Style Classic At Home

  • STEP 1.In a deep pan, heat oil and add cumin seeds to it. Let them sputter, then add chopped onion and sauté until they turn lightly golden. Add ginger-garlic paste to this and cook for another minute.
  • STEP 2.Now, add chopped tomato, turmeric, chilli powder, coriander powder, goda masala and salt to this. Cook until the tomato turns soft and the masala comes together.
  • STEP 3.Now, add the sprouted matki and water to this, mix well and cover the pan. Let it cook until the sprouts turn soft but still hold their shape, without turning mushy.
  • STEP 4.For the tarri, in another pan, heat oil and add chopped onion. Cook them until lightly golden, then add ginger-garlic paste, red chilli powder, goda masala and cumin powder to it.
  • STEP 5.Pour in warm water and then add salt. Simmer the mixture for the next 8–10 minutes until the oil rises to the surface and the tarri gets its characteristic deep, spicy taste.
  • STEP 6.To assemble, place a spoonful of matki usal in a bowl and then pour hot tarri over it. Top with some farsan or sev, chopped onion and fresh chopped coriander.
  • STEP 7.Serve it immediately with lemon wedges and warm pav. Squeeze lemon over the misal just before eating and use the pav to scoop up the spicy, crunchy and gravy-soaked usal.
