Ingredients for Mini Veggie Tlayudas Recipe

  • 1/4 cup hulled pumpkin seeds
  • 1/4 tablespoon olive oil
  • 1/4 teaspoon ground cumin
  • 1/4 garlic clove
  • 0.03 teaspoon Salt
  • 0.03 Black pepper
  • 1/4 cup sliced cabbage
  • 0.06 cup Cilantro
  • 1/2 tablespoon Lime Juice
  • 1.50 corn tortillas
  • 0.38 cup black beans
  • 1 ounce shredded mozzarella cheese
  • As required Cooking spray
  • 1/4 cup sliced tomato
  • 1/4 sliced avocado

  • STEP 1.1 preheat the grill at low flame.

  • STEP 2.2 roast the pumpkin seeds on low flame in a pan for 3 minutes till they turn light brown.

  • STEP 3.3 let them cool and then grind in a blender to make a coarse paste.

  • STEP 4.4 heat some oil in a pan and add pumpkin seeds and garlic to it.

step 6

  • STEP 5.5 cook it for 3 minutes and add salt and pepper.

  • STEP 6.6 in a bowl combine cabbage, cilantro and lemon juice.

  • STEP 7.7 place baking sheets in a pan and keep tortillas on it.

  • STEP 8.8 grill the tortillas for 3 minutes so they turn crisp.

  • STEP 9.9 evenly spread the pumpkin paste on tortillas and add beans and cheese to top of it.

  • STEP 10.10 place the tortillas on the grill and cook them for 5 minutes or until the cheese melts.

step 12

  • STEP 11.11 top it with tomatoes, and avocado slices.
