STEP 1.Wash and soak 1 cup whole urad dal for 2 hours.
STEP 1.In a mixer grinder add 1 cup soaked whole urad dal, 1 inch ginger chopped, 1 green chilli chopped, salt to taste. Blend to make a thick batter.
STEP 1.Transfer batter to a mixing bowl and add ¼ cup chopped coriander leaves and 2 onions finely chopped. Mix well to combine.
STEP 1.Heat a paniyaram pan and drizzle oil in each cavity.
STEP 1.Spoon some vada batter into each cavity. Cover for a few minutes and allow to fry. Flip over the vadas so that they fry evenly and are brown and crisp on both sides. Drizzle a little oil when flipping.
STEP 1.Serve hot with sambar.
