Middle Eastern Humshuka Recipe: High-Protein Shakshuka Served Over Hummus With Pita Recipe

Recipe By Slurrp Editorial
What happens when two Middle Eastern favourites land on the same plate? You get Humshuka, a delicious mash-up of creamy hummus and rich, tomatoey shakshuka, served with warm pita bread for maximum scooping potential. The concept is wonderfully simple. A generous layer of smooth hummus forms the base, while shakshuka, with its spiced tomato and pepper sauce and softly cooked eggs, sits right on top. The cool, creamy hummus balances the warmth and acidity of the shakshuka, while pita turns the whole thing into an easy, gloriously messy meal. Think of it as the kind of brunch dish that makes you reconsider why these two classics were ever served separately.

Directions: Middle Eastern Humshuka Recipe: High-Protein Shakshuka Served Over Hummus With Pita

  • STEP 1.Start with the hummus. Add cooked chickpeas, tahini, garlic, lemon juice, olive oil, cumin and salt to a blender. Blend until smooth, adding cold water gradually until you reach a creamy, spreadable consistency.
  • STEP 2.Spoon the hummus onto a wide serving plate and spread it into an even layer, leaving a slight well in the centre. Drizzle with a little olive oil and set aside.
  • STEP 3.Now prepare the shakshuka. Heat olive oil in a large frying pan over medium heat. Add the onion and red bell pepper and cook for 4–5 minutes until softened.
  • STEP 4.Add the chopped garlic, cumin, paprika and chilli powder. Stir for 30 seconds until fragrant, taking care not to burn the garlic.
  • STEP 5.Add the chopped tomatoes and tomato purée. Season with salt and cook for 8–10 minutes, stirring occasionally, until the tomatoes break down into a thick, saucy mixture. If the sauce looks too dry, add a splash of water.
  • STEP 6.Make small wells in the sauce and crack an egg into each one. Cover the pan and cook for 4–6 minutes, depending on how runny or set you like the yolks.
  • STEP 7.Once the eggs are cooked, carefully spoon the shakshuka over the prepared hummus. Finish with fresh coriander or parsley, a drizzle of olive oil and chilli flakes, if using.
  • STEP 8.Warm the pita breads in a pan or oven and serve alongside the Humshuka. Tear, scoop and dig in while everything is still warm.
