Ingredients for Mexican Jalepeno, Cilantro Lime Rice Recipe

  • 0.33 Cup Coriander leaves (ground to paste)
  • 0.33 Tsp Olive oil
  • 1.33 Nos Garlic cloves, chopped
  • 0.33 Inch Ginger finely choped
  • 0.67 Tbsp Jalapenos slices
  • 0.83 Cups Cooked Rice
  • 0.33 Tbsp Dried Thyme
  • 0.67 Tbsp Red chilli flakes.
  • 0.33 Tbsp Oregano
  • 0.33 Nos Juice of lemon or lime

Directions: Mexican Jalepeno, Cilantro Lime Rice Recipe

  • STEP 1.In the small jar of the mixer grinder add 1 cup coriander leaves (cilantro) and make a paste.
  • STEP 2.In a preheated pan add 1 tsp oil, 4 cloves chopped garlic, 1 inch ginger finely chopped. Saute for a few seconds till the garlic is soft.
  • STEP 3.Then add 1 onion finely chopped. Saute till onions are soft and lightly browned.
  • STEP 4.Add 2 tbsp jalapenos slices, 2 ½ cups cooked rice, 1 tbsp dried thyme, 2 tbsp red chilli flakes, 1 tbsp oregano, ground coriander paste and salt to taste.
  • STEP 5.Mix gently but thoroughly to combine the rice with all the ingredients in the pan.
  • STEP 6.Squeeze juice of 1 lemon.Stir for a few more seconds and turn off the heat.
  • STEP 7.Mexican jalapeno cilantro lime rice is ready.
