Methi Bajri Na Vada is a traditional Gujarati Snacks Recipe. These vada has Crispy yet Melt in Mouth texture. It’s made from Bajri Flour (Pearl Millet Flour) , Fenugreek Leaves and Spices. This vada is perfect as a time time snack and can be served with Green Coriander Chutney and Tomato Sauce too.

Ingredients for Methi Bajri Na Vada Recipe

  • 0.17 cup Curd (Preferably little sour)
  • 1 tbsp chopped jaggery
  • 0.17 cup fenugreek leaves
  • As required finely chopped
  • 1 tbsp sesame seeds
  • As required some more for Garnishing
  • 1/2 tbsp ginger chilli paste
  • 0.67 tbsp red chilli powder
  • As required Salt
  • 0.33 tsp turmeric powder
  • 0.17 tsp asafoetida / hing
  • 2.33 tbsp to Oil
  • 0.17 cup wheat flour
  • 167.50 cups (gm) Bajri flour
  • As required Oil For Frying

Directions: Methi Bajri Na Vada Recipe

  • STEP 1.First of all, mix curd and chopped jaggery. Jaggery will be very soft and will be easy to mix in flour.
  • STEP 2.In a broad plate, take finally chopped Fenugreek Leaves. Add Sesame Seeds, Ginger Chilli Paste, Red Chilli Powder, Turmeric Powder, Hing and Oil.
  • STEP 3.Also add Curd+jaggery mixture .
  • STEP 4.Now add Wheat flour and Bajri (Pearl Millet) Flour.. Mix everything well. Add water little by little and knead soft dough.
  • STEP 5.Cover and keep aside this dough for at least 1.5 hours to 2 hours.
  • STEP 6.Later, add few drops of oil and knead the dough little.
  • STEP 7.Make small balls out of the dough.
  • STEP 8.One can give vada shape through fingers also.
  • STEP 9.My mom use to make this shape in easy way. Spread a wet cloth on chopping board . Keep dough balls on it.
  • STEP 10.With wet fingers the flatten the balls. It’s damn easy to do it.
  • STEP 11.Sprinkle some Sesame Seeds over it. Press it little so sesame seeds won’t fall apart.
  • STEP 12.Once oil is piping hot, slow the flame.
  • STEP 13.Add few vadas to hot it. Don’t overcrowd
  • STEP 14.Fry on slow to medium flame till crispy.
  • STEP 15.Stir frequently to cook evenly.
  • STEP 16.Fry till crispy and dark in colour.
  • STEP 17.Drain and Keep on oil absorbent paper to remove access oil of any.
  • STEP 18.Store in air tight container once cooled.
  • STEP 19.Methi Bajri Vada stays fresh for 5 to 7 days (at my home , it’s vanish in just a single day 🤣🤣).
  • STEP 20.Enjoy with a hot cup of Tea....
