A mexican recipe of beef tribe prepared with onion, garlic, chiles and bay leaf. Addition of cinnamon further enhances its taste. Serve with toppings.

Rinse the beef honeycomb tripe well
In a large pot
Add the honeycomb,1 whole onion,5 garlic cloves, and 2 bay leaves
Add water and boil for 2 ½ hrs
In a small pot add the chiles and boil
Turn off heat and let it rest
Add all the chiles, ¼ onion, 2 garlic cloves, pinch of cumin, and salt to the blender.
Add the water from the chiles and blend until smooth
Before adding chile sauce discard the onion and bay leaves
Add the red sauce and 2tbsp salt to the honey tripe
Add 1cup of water to the blender to the remaining red sauce in the pot
Add the hominy to the pot
Stir and combine
Cover and simmer for 30mins
Serve with toppings
