  • 6 inch lbs Beef Honeycomb Tripe chopped into 2 s
  • As required Water
  • 1 onion divided
  • 7 garlic cloves divided
  • 2 bay leaves
  • 6 cup Hominy
  • 8 chile guajillo stem removed, deveined, and seeded
  • 3 chile de arbol stem removed, deveined, and seeded
  • pinch whole cumin
  • As required Salt
  • As required Toppings
  • As required Diced raw onion
  • As required Chopped Cilantro
  • As required Lime
  • As required Chile de arbol

step 1

  • STEP 1.Rinse the beef honeycomb tripe well

  • STEP 2.In a large pot

  • STEP 3.Add the honeycomb,1 whole onion,5 garlic cloves, and 2 bay leaves

  • STEP 4.Add water and boil for 2 ½ hrs

step 5

  • STEP 5.In a small pot add the chiles and boil

step 6

  • STEP 6.Turn off heat and let it rest

  • STEP 7.Add all the chiles, ¼ onion, 2 garlic cloves, pinch of cumin, and salt to the blender.

  • STEP 8.Add the water from the chiles and blend until smooth

step 9

  • STEP 9.Before adding chile sauce discard the onion and bay leaves

step 10

  • STEP 10.Add the red sauce and 2tbsp salt to the honey tripe

step 11

  • STEP 11.Add 1cup of water to the blender to the remaining red sauce in the pot

step 12

  • STEP 12.Add the hominy to the pot

step 13

  • STEP 13.Stir and combine

step 14

  • STEP 14.Cover and simmer for 30mins

step 15

  • STEP 15.Serve with toppings
