Menestra is a traditional Ecuadorian lentil stew simmered with onion, pepper, tomato, garlic, cumin, and cilantro. Menestra is served with rice and thin grilled steaks or carne asada.
STEP 1.Heat oil in a pan on medium flame .add onions, bell pepper, tomato, garlic, cumin, achiote, salt and 2 tablespoons of the cilantro to make arefrito for the stew.
STEP 2.Cook by stirring occasionally until all the ingredients get softened. Add water and increase the flame and bring it to boil.
STEP 3.Add lentils to the pan and reduce glane to medium low. Cover the pan partially and cook until the lentils become tender.
STEP 4.Stir in the remaining cilantro and remove from the heat .
