  • 150 gram Yellow Noodles
  • 1 Shallots
  • 1 cloves Cloves Of Garlic
  • 25 gram Dried Shrimp
  • 1/2 Small Sweet Potato, Peeled And Cubed
  • 1 tablespoon Oil
  • 1/2 tablespoon Curry Powder
  • 250 milliliter Water
  • as needed Bean Sprouts, For Garnish

Cooking Directions

  • STEP 1.Boil the yellow noodles until they are cooked al dente. Drain and set aside.
  • STEP 2.In a blender, blend together shallots, garlic, dried shrimp, and sweet potatoes until smooth.
  • STEP 3.Heat oil in a large pot and sauté the blended mixture until fragrant.
  • STEP 4.Add in the spice paste, curry powder, and water. Stir well and bring to a boil.
  • STEP 5.Reduce the heat and simmer for about 15 minutes until the gravy thickens.
  • STEP 6.In a separate pot, blanch the bean sprouts and set aside.
  • STEP 7.To serve, place a portion of yellow noodles in a bowl and ladle the gravy over it.
  • STEP 8.Garnish with bean sprouts, boiled eggs, fried tofu, and a squeeze of lime juice.
