  • 1/2 tablespoon Rounded finely chopped sun dried tomatoes
  • 1/2 cup Cooked Quinoa
  • 1/2 Persian cucumbers sliced
  • 1/4 cup Fresh Parsley Chopped
  • 1/2 tablespoon Olive oil
  • 1/2 tablespoon Red wine vinegar
  • As required Salt + pepper

  • 1/4 Roasted red pepper sliced
  • 1/4 Avocado sliced
  • 2 ounce Feta Cheese Crumbled
  • As required Toasted pine nuts, sunflower seeds and or sesame seeds, for topping
  • 1/4 cup Plain greek yogurt
  • 0.08 cup Tahini
  • 0.06 cup Fresh lemon juice
  • 1/4-1/2 tablespoon Harissa or finely chopped sun dried tomatoes
