Ingredients for Mbeju Recipe

  • 2 cup cassava flour
  • 1/2 teaspoon kosher salt
  • 1 pinch cayenne pepper
  • 4 tablespoon cold butter, cut into cubes
  • 120 gram freshly grated mild Cheddar cheese
  • 0.33 cup cold milk, or more as needed

step 1

  • STEP 1.1 - in a bowl take some cassava flour, salt, cayenne pepper, grated cheese and butter.

step 2

  • STEP 1.2- combine everything with your hands and drizzle some cold milk on top. Mix it well.

step 4

  • STEP 1.3- heat a pan on medium to high flame. Cover the pan with the mixture and press it. Cover and cook for about 3-4 minutes. Flip it and cook it the similar way.
