Purple Corn Pudding a Classic Peruvian dessert. Mazamorra morada's main ingredient is the popular Peruvian food maize morado or Peruvian purple corn. It is traditionally eaten warm in Peru but can even be eaten cold if desired. Mozamorra is a maize soup; milky pudding made with maize; pudding made with corn starch, sugar and honey. It is one of the most traditional dessert of the country.

Ingredients for Mazamorra Morada Recipe

  • 1 kilogram purple corn
  • 5 liter Water
  • 2 No.s cinnamon sticks
  • 6 No.s Cloves
  • 1 No.s pineapple peel
  • As required Dried fruits aftertaste
  • 150 gram Sugar
  • 1/2 cup thief
  • As required Fresh pineapple cut in cubes
  • 100 gram Cornstarch
  • 100 gram potato starch
  • 1 No.s Lime
  • As required Grounded cinnamon

Directions: Mazamorra Morada Recipe

step 1

  • STEP 1.1 - take 4 litres of water in a pan and boil purple corn in it with cinnamon sticks, cloves, pineapple peel, peaches and apricot.

step 2

  • STEP 2.2 - boil this for an hour.

step 3

  • STEP 3.3 - strain the liquid and cook it in low heat with sugar, dried prunes, freshly chopped pineapple.

step 4

  • STEP 4.4 - cook this till the fruits become soft.

step 5

  • STEP 5.5 - in a bowl take 1 litre water and add corn flour and potato starch to it.

step 6

  • STEP 6.6 - make a smooth paste and gradually add it to the pan.

step 7

  • STEP 7.7 - give it a nice stir and add lemon juice.

step 8

  • STEP 8.9 - mix it well and cook until it becomes thick.
