A tangy sweet and spicy vegetable curry from Karnataka flavoured with ground roasted spices. Maskasangi Magge Kodel Recipe is a coconut gravy flavoured with garlic which is best served with hot steamed rice which is basically a coconut and dry red chilli gravy that seasoned with good amount of garlic. Serve it along with steamed rice and chicken roast by the side.

Ingredients for Maskasangi Magge Koddel Recipe

  • As required Ingredients for grinding
  • 4 Nos Dry red chillies
  • 1 tablespoon Coriander seeds
  • 1/2 cup Freshly grated coconut
  • As required Ingredients for koddel
  • 1 Nos Drumstick
  • 1 cup Mangalore cucumber
  • As required Salt
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 2 tablespoon Jaggery
  • 1 cup Tamarind water
  • As required Freshly ground chilli coconut masala
  • As required Ingredients for Tempering
  • 6 cloves Garlic
  • 1 teaspoon Oil

Directions: Maskasangi Magge Koddel Recipe

step 1

  • STEP 1.Preheat a pan and dry roast 4 dry red chillies, 1 tbsp coriander seeds and roast on medium heat for 2 to 3 minutes till the aroma of the spices comes through. Turn off the heat.

step 2

  • STEP 1.Transfer the roasted spices to the small grinding jar. Add ½ cup freshly grated coconut and a little water and grind to a smooth paste.

  • STEP 1.In a pressure cooker add 1 drumstick cut into 1 inch pieces, 1 cup mangalore cucumber diced, salt to taste, 1 tsp turmeric (haldi) powder, ½ tsp red chilli powder (optional), 2 tbsp jaggery, 1 cup tamarind water and freshly ground chilli coconut masala .stir well. Pressure cook for 3 whistles. Turn off the heat and allow pressure to release naturally.

step 4

  • STEP 1.In a pan add 1 tsp oil and allow it to get hot. Add 6 crushed garlic cloves and saute till garlic turns light brown and aroma is released. Turn off the heat and add garlic tadka to the koddel (curry)in the pressure cooker.
