How to Make Masala Akki Roti Recipe

Into a large mixing bowl add 2 cups rice flour, 1 finely chopped onion, ½ bell pepper finely chopped, 1 carrot grated, ¼ cup dill leaves finely chopped, ¼ cup cabbage finely chopped, ¼ cup coconut grated, 2 green chillies finely chopped, 1 inch ginger finely chopped, ½ tsp cumin seeds, salt to taste and ¼ tsp asafoetida.

Mix well to combine. Add warm water a little at a time and knead to make a smooth dough. Cover and rest for 15 minutes.

Grease hands with a little oil and divide the dough into small lemon size portions.

Wet a muslin cloth with water, take a ball and place it on the cloth. Pat it down to make a circular shape. Poke a few holes in it to make the akki roti.

Invert this onto a preheated pan and cook for a few seconds. Drizzle oil and flip it over. Cook till evenly golden brown on both sides. Serve with chutney and coffee.
