Red pork Chinese delicacy recipe Mao’s red braised pork is an authentic Chinese dish made with pork belly that’s slowly braised in soy sauce, rice wine, vinegar, and spices until sticky and sweet. It’s so good, we’re affectionately referring to it as “pork candy.”

Ingredients for Maos Red Pork Recipe

  • 900 gram pork belly
  • 6 piece Ginger
  • 2 tablespoon Oil
  • 3 tablespoon Sugar
  • 3 No.s scallions
  • 1/2 cup Shaoxing Wine
  • 3 tablespoon light soy sauce
  • 1.50 tablespoon dark soy sauce
  • 1 piece Cinnamon Stick
  • 2 No.s Star anise
  • 4 No.s bay leaves
  • 2 No.s dried chili peppers
  • 4 cup Water

Directions: Maos Red Pork Recipe

step 1

  • STEP 1.1. The first step is to blanch the pork belly, which removes any blood or impurities from the meat. To do this, add the pork belly and 3 slices of ginger to a pot with enough cold water to submerge the pork belly. With the lid on, bring it to a boil.

step 2

  • STEP 2.2. Once the pot boils, turn down the heat and simmer for one more minute. Drain, rinse the pork belly clean, and set aside.

  • STEP 1.3. With the wok set over low heat, add the oil and rock sugar (or 3 tablespoons regular sugar).

  • STEP 3.2. Slowly melt the sugar, taking care to not let it burn.

  • STEP 4.3. Stir and make sure everything is submerged.

  • STEP 5.4. Bring the mixture up to a simmer over medium low heat for 1 hour.

step 7

  • STEP 6.5. Once the pork is to your liking in terms of tenderness, turn up the heat to cook off any excess sauce, stirring constantly. Add in the remaining ½ teaspoon sugar and the green parts of the scallions. Stir quickly and serve!
