Cooking Directions

  • STEP 1.In a mixing bowl, combine mango pulp, maize flour, semolina, yogurt, ginger-green chili paste, turmeric powder, salt, and sugar. Mix well to form a smooth batter.
  • STEP 2.Add water as needed to adjust the consistency of the batter. It should be thick yet pourable.
  • STEP 3.Grease a steamer plate or a round cake pan with oil. Pour the batter into the greased plate.
  • STEP 4.Steam the dhokla for about 15-20 minutes or until a toothpick inserted in the center comes out clean.
  • STEP 5.Once done, remove from the steamer and let it cool for a few minutes.
  • STEP 6.Cut the dhokla into square or diamond-shaped pieces.
  • STEP 7.For tempering, heat oil in a small pan. Add mustard seeds, cumin seeds, sesame seeds, and curry leaves. Let them crackle.
  • STEP 8.Pour the tempering over the dhokla pieces. Garnish with chopped coriander leaves.
  • STEP 9.Serve the mango maize dhokla with green chutney or tamarind chutney.
  • STEP 10.Store any leftovers in an airtight container in the refrigerator for up to 2 days.
