  • As required Ingredients for ground spice
  • 3 No.s Red chilies
  • 1 teaspoon Black peppercorns
  • 2 tablespoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • As required Ingredients for sonay sukka
  • 1 teaspoon Oil
  • 1 teaspoon Mustard seeds
  • 4 Garlic chopped cloves
  • 1 Onion Finely Chopped
  • 1 sprig Curry leaves
  • 1 cup Cooked kabuli chana
  • 1/4 cup Freshly grated coconut
  • As required Fresh ground spice powder
  • 1/4 cup Tamarind water

Directions: Manglorean Style Sonay Sukka Recipe

step 1

  • STEP 1.Wash and soak 1 cup kabuli chana for 8 hours or overnight. Pressure cook till chana is soft.

step 2

  • STEP 1.In a preheated pan dry roast 3 red chilies, 1 tsp black peppercorns,2 tbsp coriander seeds, 1 tsp cumin seeds on medium heat for 1 to 2 minutes till the aromas come through. Do not brown the spices.

  • STEP 1.Transfer the roasted spice to a small grinding jar and grind to a coarse powder.

  • STEP 1.Preheat a pan and add 1 tsp oil, 1 tsp mustard seeds and allow the seeds to crackle.

  • STEP 1.Then add 4 cloves chopped garlic, 1 onion finely chopped and 1 sprig of curry leaves. Saute till the onions become tender and soft.

step 6

  • STEP 1.At this stage add 1 cup cooked Kabuli chana (chickpea), ¼ cup freshly grated coconut, fresh ground spice powder, salt to taste. Mix well to combine all the ingredients.

  • STEP 1.Next add ¼ cup tamarind water and cover the pan and allow the chickpeas and spices to simmer on medium heat for 4 to 5 minutes till the tamarind water is
