  • As required preferably small and naturally sweet
  • 1/2 cups all-purpose flour (maida)
  • As required ¼ cup thick yoghurt
  • 1.25 tbsp –sugar
  • As required ½ tsp cumin seeds
  • 1/4 nos pinch salt
  • 1/4 nos Pinch baking soda
  • 1/4 tbsp Ghee
  • 3/4 tbsp –water
  • As required only if required
  • As required Oil
  • As required for deep-frying

Directions: Mangalore Buns Recipe: The Banana-Rich Breakfast From Coastal Karnataka

  • STEP 1.Peel off the ripe bananas and mash them nicley in a large bowl until smooth. Now, add yoghurt, sugar, ghee, cumin seeds and salt, to this and mix everything nicely.
  • STEP 2.Now, add the flour and baking soda to this, and mix nicley until you get a soft dough. Avoid adding too much water as the banana and yoghurt deliver most of the moisture.
  • STEP 3.Cover the dough and let it rest for at about 6 to 8 hours, likely for overnight. This long resting period softens the dough and give the buns their distinctive texture.
  • STEP 4.After keeping them for rest, divide the dough into equal portions. Grease your hands lightly and then roll each portion in a ball. Flatten and roll each of them into a small, thick disc, as little thicker than the regular puri.
  • STEP 5.Here,after, heat oil in a deep kadai over medium flame. Slide one rolled bun into the oil and then gently press the surface with a slotted spoon so that it puffs up.
  • STEP 6.Fry until it turns golden from both sides, turning once or twice. Keep the heat medium so that the outside does not get brown too quickly while the centre gets cooked. Remove and drain on a kitchen towel.
  • STEP 7.Serve the warm Mangalore buns with coconut chutney, vegetable sambar or a simple cup of filter coffee. Their light sweetness works quite well against a spicy or tangy accompaniment.
