Ingredients for Mangalore Banana Buns Recipe

  • 1 overripe banana
  • 2 tablespoon Yogurt
  • 1/2 teaspoon Salt
  • 3-4 As required tbsp sugar/ sugar
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon baking soda
  • 2 cup wheat flour
  • As required Some extra maida for dusting
  • 1 tablespoon Ghee

  • STEP 1.Peel the banana and place it in a bowl add 4tbsp sugar and start mashing it with the help of your finger( you can also grind the banana and sugar but traditionally it is supposed to be done with your fingers).

  • STEP 2.The sugar helps in the liquefaction of the banana.

  • STEP 3.Add 2 tbsp yogurt and mix it properly with the banana paste.

  • STEP 4.Next, add the ½ tsp salt( if needed you can add more), ½ tsp cumin seeds, and ½ tsp baking soda mix all the ingredients well with the paste.

  • STEP 5.Now add 1 cup of maida and start kneading it, knead it gently.

  • STEP 6.The second cup maida is to be poured steadily, add a little at a time, and keep kneading(divide it into 4 parts).

  • STEP 7.Adding the maida all together may lead to tightening the dough.

  • STEP 8.Add 1tbsp ghee to keep the maida all together and not become sticky.

  • STEP 9.Cover the dough and keep it in a warm place overnight. It is necessary for the bun to ferment.

  • STEP 10.The next morning take it out (it will be twice its shape).

  • STEP 11.Sprinkle more maida and knead the dough gently. There is no particular measure to add maida but keep adding until the binds together.

  • STEP 12.Take a kadai and pour the right amount of soy oil, preheat the oil on medium flame.

  • STEP 13.Meanwhile, take a little ball of dough, coat it with maida, and in a waffle bell make a small roti(don’t make it thin).

  • STEP 14.Add it to the oil and deep fry the bun. Once it puffs up, reduce the flame and cook it evenly from all sides.

  • STEP 15.Repeat the same process.

  • STEP 16.The bun should be fluffy and serve it with white butter/coconut chutney.

  • STEP 17.Tastes best when consumed hot.
