Malpua is a type of pancake which originated from the Indian subcontinent and is popular in India, Nepal, Bangladesh. Malpua is a festive delight and traditionally made in Indian households during festivals like holi ,Diwali, Navratri etc. Malpua is popular in Uttar Pradesh, Rajasthan, Maharastra, Bihar, Orrissa and West Bengal. Though making process is different in each state. Amalu - a popular version of malpua is a part of the Chappan bhog offered to Lord Jaggannath in Puri. Apart from flour, fruit, khoya, coconut are also used in making Malpuas. Even various flours are used in making malpuas. Malpuas can be served with sugar syrup and rabdi also.

Ingredients for Malpua Recipe

  • 1/4 cup All purpose flour
  • 0.13 tsp Cardamom powder
  • 0.13 tsp coarse fennel seed powder
  • 0.38 cup Warm milk
  • 1/2 tbsp milk powder (optional)
  • 1/4 tbsp powdered sugar (optional)
  • 1 tbsp 4-5 tbsp
  • 1/4 g For sugar syrup
  • 1/4 cup Sugar
  • 0.06 tsp Saffron
  • 1/4 g For garnish
  • 1/4 tbsp Almond flakes
  • 1/4 tbsp Pistachio flakes

Directions: Malpua Recipe

  • STEP 1.1. Add cardamom powder and fennel seed powder in flour and mix. Add milk powder in milk and mix well.
  • STEP 2.2. Add this milk mixture little by little to flour and prepare a lumpfree and dropping consistency batter. If required add more milk. Cover and rest the batter for 1/2 an hour.
  • STEP 3.3. For sugar syrup: Add water in sugar till it submerges. Turn on the heat and add saffron. Boil sugar syrup until it reaches a one string consistency.
  • STEP 4.4. After that heat ghee in a broad pan . Beat the batter nicely before making malpuas.
  • STEP 5.5. Once ghee becomes hot, pour one laddle full batter in centre, it will spread itself. Let it fry till it turns golden and then flip other side and fry. It will puff like puris.
  • STEP 6.6. Then put fried malpua direct in sugar syrup. Sugar syrup should be warm. Continue and prepare malpuas from the remaining batter. Let the soak in sugar syrup for 10-15 minutes.
  • STEP 7.7. Remove from the sugar syrup, garnish with almond ,pistachio silvers. Relish.
  • STEP 8.Note:
  • STEP 9.1. Keep batter consistency thick or thin as per your choice of Malpua
  • STEP 10.If you like thin malpuas, prepare thin batter.
