Cooking Directions

  • STEP 1.Wash and dry the okra/lady finger. Slit them lengthwise, keeping one end intact.
  • STEP 2.In a mixing bowl, combine the spices, coconut, peanuts, and tamarind pulp to make the stuffing mixture.
  • STEP 3.Stuff the mixture into the slit okra/lady finger.
  • STEP 4.Heat oil in a pan and add mustard seeds, cumin seeds, and asafoetida. Once they splutter, add the stuffed okra/lady finger.
  • STEP 5.Cover and cook on low heat for about 15-20 minutes, stirring occasionally, until the okra is tender.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with roti or rice.
