This traditional and popular Kerala evening recipe comprises all-purpose flour and maida as the main ingredients. It is an evening deep-fried snack dunk in sugar syrup. Do you know Markku's sweet recipe is popularly known as madatha khaja? First, its coatings are deep-fried, and then these fritters are dipped in sugar syrup. This confection has multiple layers, commonly called madakku (indicates fold). Usually, this khaja is crafted during celebration junctures, and it tastes scrumptious. Markku confectionary needs only three main ingredients; yet, the preparation takes some time to roll, layer the dough and deep fry them.

Ingredients for Madakku Recipe

  • 0.17 cup Sugar
  • 0.13 cup Water
  • 1/2 No.s Cardamom
  • 0.33 cup Maida/All purpose flour
  • 0.17 pinch Salt
  • 0.17 pinch Yellow food colour
  • 0.17 Ghee tbps
  • 0.33 teaspoon Rice flour

Steps to prepare

  • STEP 1.Don't use any butter or oil while kneading the dough, and roll the sheets thin.

Cooking Directions for Sugar syrup

  • STEP 1.Add 1 cup of sugar, ½ cup of water, and 3 cardamoms in a pan.
  • STEP 2.Boil to form a syrup consistency. Set aside.

Cooking Directions for Madakku

  • STEP 1.In a bowl mix, 2 cups of maida/all-purpose flour, ¼ cup of water, a pinch of salt, and a yellow food colour pinch. Mix well the ingredients.
  • STEP 2.Knead to form a thick dough.
  • STEP 3.Divide the dough into two halves.
  • STEP 4.With a rolling board and pin, make thick flattened dough sheets.
  • STEP 5.Grease 1 tbsp of ghee over the flattened dough
  • STEP 6.Sprinkle 1 tsp of rice flour on top of it.
  • STEP 7.Wrap around to form a complete roll of the flattened sheet, just like sushi rolls.
  • STEP 8.Slice down the entire roll further into rolls of 1-2cm in width
  • STEP 9.Flatten each roll lengthwise using a rolling pin.
  • STEP 10.Fry the prepared flattened pieces in a frying pot. Toss the sides and fry till golden yellow colour.
  • STEP 11.Toss in the sugar syrup for a few seconds and take it out.
  • STEP 12.Hot delicious madakku is ready to be served.

Pro Tip

  • STEP 1.¼ tsp of turmeric powder can be used as an alternative for yellow food colour.
